Island Latke Recipe

One bag Alexia Yukon hash browns

One finely chopped onion

One teaspoon salt

1/4 cup All-purpose flour

1/2 cup Panko

Three eggs beaten.

Fry in oil.

 

Cranberry sauce

One bag fresh cranberries

One cup sugar

Juice and zest from one Meyer lemon

Place in blender till smooth.


Hanukkah Recipe for Potato Latkes

Potato Latkes on a plate

Ingredients

  1. One pound of potatoes
  2. One small onion
  3. One large egg
  4. Kosher salt, cayenne pepper
  5. ½ cup olive, or fill skillet halfway

Accompaniments

  1. Sour cream
  2. Apple sauce

Prepare:  Pre heat oven to 200º oil pan or use baking sheet

  1. Make large bowl of ice-cold water, fill halfway
  2. Grate potato, poke large holes in the side, immediately put in water
  3. Have colander with cheese cloth ready or paper towels
  4. Using a slotted spoon, take potato out of water and place in colander
  5.  Syphon off water of potatoes using the cheese cloth or heavy paper towel
  6. In a medium bowl, place potatoes, onion, egg, seasoning
  7. Add starchy substance from potato, soaking carefully
  8. Mix well, place in slotted spoon or metal spatula, let drain
  9. After draining, slide potato mix into hot oil
  10. Flip once until golden brown
  11. Makes 6 to 8 pancakes

That’s my quick explanation on how to make latkes. There are many other recipes that add other ingredients depending on what part of the world your ancestors came from.
